Stuff It

Made stuffed bell peppers with enchilada sauce for dinner last night. Added chicken for some protein and though the recipe called for quinoa, I used couscous because my grocery store didn't sell quinoa! Wth.

I also have very shaky hands after making dinner and with the low-lighting, everything is so blurry!

Ryan and I ate it with tortillas, but you don't have to if you want to be more carb-conscious. I have to admit, I am enjoying looking up new recipes to try and make. I am definitely NOT good at taking food pictures, so I apologize if my food porn is more like, food skinamax.
